Frying Flour
Almost fifty years ago, at JJ Ortega Derivados S.L., we created the first flour specifically designed for frying fish, a milestone that marked the beginning of our passion for achieving impeccable batter. Since then, we have dedicated each decade to perfecting the milling, adjusting the grain size, and refining the original recipe to always achieve a golden, crispy, and light finish that enhances the flavor of the “pescaíto” without masking it.
As awareness and the prevalence of celiac treatment increased, we identified the need to extend this experience to all palates. Thus, our gluten-free version was born, formulated exclusively with certified grains — milled and packaged in separate facilities — to eliminate any risk of cross-contamination. The result is a specialized blend that allows you to enjoy a fried product as airy and crispy as in the past, without compromising the food safety required by a gluten-free diet.
In our mill, we apply artisanal methods combined with exhaustive quality controls at each stage: from grain selection to final packaging. Through periodic analyses and frying tests, we guarantee an optimal oil absorption point and a texture that withstands the passage of time in the pan.
